Toasted Cauliflower Fried Rice

A side dish that is filling, tasty, and guilt free! Made entirely of cauliflower in a low carb imitation of rice.

Ingredients

  • 1/2 large cauliflower head
  • 1 tbsp garlic chopped small
  • extra virgin olive oil
  • salt and pepper
  • 1 handful cherry tomatoes, spinach or substitute

Instructions

  1. Cut off about 1/2 a cauliflower head and break up into medium sized florets about 1 inch in size. Put florets into food processor and chop until cauliflower is a small "grain" size.

  2. Heat up cast iron pan or wok to medium high and drizzle a bit of the olive oil in. When hot, add the garlic into the pan and cook lightly then immediately add the cauliflower bits. Cook until lightly toasted!

  3. For added veggies, fry in the pan either with the rice (I would with spinach or leafy greens) or after the rice has been cooked for about 5 minutes or until soft and lightly brown, and then removed to a bowl. 

  4. Sprinkle salt and pepper to taste. You can always add other bits into the cauliflower like a regular fried rice, like bit of chicken or pork, or even a chopped up omelette. All done!
