It is HOT. I mean like 35 degrees Celsius in Ontario HOT. On top of that, for the last 4 days, I’ve been doing a detox and only eating fruits/veggies in addition to my detox tea and juice, so I needed something to eat that fit into what I was currently trying to eat and also to beat the heat! I turned to two water based foods and got a very healthy and very refreshing Watermelon & Cucumber “salad” with nuts! In fact, I have bought enough so I could make this 2-3 times and have enjoyed it each time this weekend.
Basically, I got in natural sugar, a good amount of healthy fats from the mixed nuts (hazelnut, cashew, peanut, almond, Brazil nut, pecan), vitamin C, and fibre! Woohoo, promoting healthy body functions! There’s no dressing needed, especially if you pick up lightly salted nuts. Since I wasn’t eating any processed foods or meats during my detox, I felt okay using the salted nuts as the essential minerals in salt act as important electrolytes in the body. They help with fluid balance, nerve transmission and muscle function. Too much salt overall is B-A-D but, too little salt can also be bad! Healthline lets us know what can happen if there’s too little salt in our diets. Of course, there’s naturally salt in other foods, so you should just make sure your day to day diet contains a moderate amount of salt.
Watermelon and Cucumber Salad
The most refreshing summer salad that you'll want to eat over and over again.
Ingredients
- 20 cubes watermelon, about 1/2"
- 1/3 cucumber
- 1/4 cup mixed nuts salted or unsalted
Instructions

Cut the watermelon into cubes from to about 1/2 inches - I ate about 20 cubes in my salad but you can add more or less. If you're lazy, you can get pre cut up watermelon cubes from some grocery stores and then just cut those big cubes down to 1/2".

Slice the cucumber from the rounds and if you want, cut those slices in half. I did whole rounds the first time and 1/2 rounds the second time!
Mix in the nuts and voila!
