Have you ever watched a video where a kid gets an avocado for a gift and he says, “An avocado….thaaaaaaanks” and it is absolutely the best thing. It’s a running joke that whenever we see an avocado, we copy the kid and say that every time ?. If you haven’t watched it, here you go!
I am obsessed with avocados. Currently, I’m growing an avocado tree! It’s about a foot tall now and in about 1.5 months, it’s grown from itty bitty roots in a cup of water to something that looks like it will actually grow into a tree. SO EXCITED. I am so excited that I have to show you guys a picture of my plant:
Avocados are so versatile, you can use the oil from it to cook (at a higher smoke point than olive oil), put it on toast, slice it up for salads, frittatas, and sides, or smash it up for guacamole! Things you might not know about avocados are that they are a SUPERfood – they have tons of good fats, they are good for your heart, and they are sodium, sugar, and cholesterol free. These fruits are pretty stellar as they PACK those nutrients in (vitamins & minerals) while being on the low calorie scale. Basically, avocados are an excellent food to eat all the time! This guacamole is great for an after school snack with corn tortilla chips, or in wraps, in tacos, in a sandwich, or even for a Mexican salad with tortillas. Running to work? Quickly mix some up in the morning to go. Just want to have some crackers or chips? Make some to add deliciously healthy topping for them!

Goat Cheese, Spinach, & Avocado Frittata
Super Guacamole
Packed with vitamins, minerals, good fats, and low calories, this guacamole is a simple and SUPER addition to meals and snacks. It's extremely quick (using salsa and raw onions) and healthy to boot.
Ingredients
- 2 avocados
- 1 squirt lime juice (from 1 slice lime or from bottle)
- 3-4 tablespoons Tostitos Salsa (Medium) adjust depending on how much avocado is produced
- 1 tbsp finely diced white onion
- 1 pinch salt
- 1 pinch black pepper
- 2 pinch paprika
- 1 pinch cayenne pepper
Optional
- 2 tbsp finely diced tomato
- 1 tsp diced jalepeno pepper
Instructions

In a small bowl, use a fork to squish the avocado fruit until soft. You can leave some medium sized chunks that are not mashed for more texture! Add in the remaining ingredients, using the fork to incorporate them into the avocado. Serve immediately.
Recipe Notes
You can keep the guacamole for a day or two in the fridge, however, keep in mind that the avocado will begin to change colour to brown. This is still edible but it doesn't look as appealing! Make sure there is either lime or lemon juice in the guacamole to ensure the acidity will help retain freshness of the avocado.
