The rest of this has remained HOT, HOT, HOT. The only escape was to go inside and sit in front of a fan and hope that our AC did something! The house is pretty old so on the older section where my room is, it doesn’t circulate well ? so it’s always fingers crossed that we’ll cool down enough! Even in this heat, I did ridiculous things like wash my car, vacuum the living room, clean in the sweltering attic, and take a short hike – which in retrospect were all reeeaaaal silly. ?
Luckily, we had fruits on hand and the freezer was A okay, so to beat the heat, I cut up strawberries and kiwis and tossed them into the popsicle mold with some apple juice — easy peasy lemon-squeasy. Hurray!
Strawberry Kiwi Real Fruit Popsicles
Puts the FRESH in REFRESHING! ?
Ingredients
- 1 1/2 kiwi
- 1/2 cup strawberries
- 1 1/2 cups apple juice
Instructions

Slice the kiwi and strawberries into thin and small pieces. I left some of my kiwi slices as whole round and others as half rounds.

Add the apple juice to the 6 popsicle molds and then fill with the fruit as you wish. You can poke some of the fruit lower so that they will spread out a little when they freeze. Leave in the freezer for 5 hours or overnight to ensure it sets; then take it out and enjoy!
