a cabbage of a variety that bears a large immature flower head of small creamy-white flower buds.
Fun fact: the word cauliflower comes from an Italian word that means cabbage flower! We don’t usually eat the part of the cauliflower that looks like cabbage though it’s not inedible. I mean I really love regular rice but I have also discovered that I am absolutely in love with a ton of cauliflower foods like cauliflower mash and now, cauliflower rice!
Cauliflower rice is actually finely diced cauliflower florets to make small granules and give the impression of rice. Easy peasy! I used my food processor to quickly chop up the florets and it comes out pretty evenly. If you don’t have a food processor, you can use a blender but that tends to make some bits more mushy, so you’d have to add a bit of cold water to the blender so it evenly chops.
This is such a fast side, and is so tasty, that you’ll want to keep making more of this! It’s a very good source of nutrition too, and you can read more about it on Dr.Axe’s site. Here’s a brief list of things eating cauliflower is good for!
- Helps Reduce Cancer Risk
- Fights Inflammation
- Decreases Risk for Heart Disease and Brain Disorders
- Provides High Levels of Vitamins and Minerals (Especially Vitamin C and Vitamin K)
- Improves Digestion and Detoxification
- Aids in Weight Loss
- Helps Balance Hormones
- Preserves Eye Health
So the next time you’re at the grocery store, be sure to pickup a couple heads of cauliflower!
Toasted Cauliflower Fried Rice
A side dish that is filling, tasty, and guilt free! Made entirely of cauliflower in a low carb imitation of rice.
Ingredients
- 1/2 large cauliflower head
- 1 tbsp garlic chopped small
- extra virgin olive oil
- salt and pepper
- 1 handful cherry tomatoes, spinach or substitute
Instructions
-
Cut off about 1/2 a cauliflower head and break up into medium sized florets about 1 inch in size. Put florets into food processor and chop until cauliflower is a small "grain" size.
-
Heat up cast iron pan or wok to medium high and drizzle a bit of the olive oil in. When hot, add the garlic into the pan and cook lightly then immediately add the cauliflower bits. Cook until lightly toasted!
-
For added veggies, fry in the pan either with the rice (I would with spinach or leafy greens) or after the rice has been cooked for about 5 minutes or until soft and lightly brown, and then removed to a bowl.
-
Sprinkle salt and pepper to taste. You can always add other bits into the cauliflower like a regular fried rice, like bit of chicken or pork, or even a chopped up omelette. All done!
